My family loves lasagna. Some of our absolute favorite recipes are our Easy Homemade Lasagna and Easy Slow Cooker Lasagna.
I tried these Spinach Lasagna Rolls at a friends house and couldn’t wait to make them for my family.
They were so delicious and I couldn’t believe how easy they were to make!
Ingredients for Spinach Lasagna Rolls:
- 12 lasagna noodles
- 10 ounces frozen spinach 1 package, thawed and drained
- 15 ounces low fat ricotta cheese 1 container
- ½ cup grated parmesan cheese
- 1 egg
- salt and pepper, to taste
- 32 ounces marinara sauce
- 2 cups shredded fat free mozzarella cheese

How to Make Spinach Lasagna Rolls:
My kids loved this fun twist on traditional lasagna. These easy lasagna rolls make it look like you’ve spent all day making a delicious meal in the kitchen, but they can be made in minutes!
These Spinach Lasagna Rolls are made without meat, but if you wanted to brown some Italian sausage, ground beef or ground turkey to add in with the marinara you totally could.
I was a little bit worried about my kids trying to pick out all of the spinach, but they didn’t bat an eye at it!
With all the cheesy, saucy goodness of these lasagna roll-ups, you won’t hear any whining at the dinner table.
Step 1: Cook lasagna noodles according to package directions, then rinse in cold water and pat dry with paper towels.
Step 2: In a large mixing bowl, combine spinach, ricotta, Parmesan, egg, salt and pepper until combined; set aside.
Step 3: Spray a 9×13-inch baking pan with nonstick cooking spray. Spread enough marinara sauce in the pan to cover the bottom in an even layer.
Step 4: Divide cheese mixture equally between lasagna noodles and spread evenly over each noodle.
Step 5: Roll up each noodle and place seam side down in prepared baking dish.
Step 6: Spoon remaining marinara over rolled noodles and top with shredded mozzarella.
Step 7: Cover with foil and bake for 40 minutes at 350 degrees F.
Enjoy! My kids and I typically eat just one lasagna roll for dinner, while my husband likes to have a little bit more. 😉

These lasagna rolls also make great leftovers! Place leftovers in an airtight container and keep in the fridge for a few days and throw it in the microwave for a minute to reheat it.

If you prepare this to freeze (plan on cooking in the oven at a future date), and add ground meat – should i cook the meat before rolling up?
For sure cook the ground meat before rolling up and freezing.
Have you frozen these before? Any tips? Do they turn out well after being frozen?
We think you could make these all the way, then freeze them. Thaw and reheat. It should work. (But we really have never used this recipe as a freezer meal.) Just looking over the ingredients, a lot of these same items are in some of our other freezer meals. Best of luck to you. 🙂
I make a version of this all the time, but it never makes it to the freezer! I make it with pancetta in the filling. Giada DeLaurentis has a similar recipe. It’s so good, there’s no way it could be weight watchers!
How do you roll up dry noodles? Wouldn’t they just break?
They are cooked, just dry off any liquid remaining on them. They are still very bendable and flexible to work with.
Do you think you can use fresh spinach and freeze it? I have a bag to use up.
Should work just fine!
Could be wrong, but I’ve heard you should blanch spinach before freezing/baking….??? It’s not hard, just an extra step.

I cooked it earlier today, and just want to reheat. How would you reheat? Oven? How long? What temp?
You can reheat at 350. Be sure to cover since they have already been cooked. You’ll want to cook until heated through. We have often reheated leftovers in the microwave.
Do you use a whole lasagna noodle strip for each one?
